The Kellerbier features a strong Pilsner malt profile supported by the bready, toasty characteristic of Munich malt and melanoidin. The generous, late additions of Tettnang hops provide a floral, somewhat fruity aroma. This is traditionally a cask-conditioned lager; to emulate the wooden barrels, a handful of toasted oak is added to the fermentor. Authentically, the Kellerbier is unfiltered, so avoid the use of kettle finings (such as Whirlfloc) and do not fear the haze.
